The Method

1

Toast the thick slice of sourdough bread until deeply golden and visibly crisp on the outside, but still slightly soft in the very center.

Chef's Secret

Use a toaster slot set to medium-high, or toast it in a dry cast-iron pan for superior crispness and edge control.

2

The moment the toast is done, immediately rub the cut side of the raw garlic clove firmly against the hot, rough surface of the bread.

The Science

The jagged, hot surface of the toast acts like a microplane grater, shaving invisible micro-layers of garlic onto the bread. The latent heat slightly cooks the garlic oils, turning its harsh bite into a deeply savory, mellow foundational layer.

3

Scoop the flesh of half a ripe avocado into a bowl. Add the lemon juice immediately.

The Science

Lemon juice contains ascorbic and citric acid. The acid lowers the pH of the avocado, delaying the enzymatic browning process and keeping the avocado vibrant green while providing crucial acidic contrast to the rich fat.

4

Using a fork, roughly mash the avocado. Leave plenty of distinct chunks; do not puree it into a baby-food consistency.

Chef's Secret

A completely smooth puree feels heavy and overwhelmingly fatty on the palate. A chunky mash provides textural variety, contrasting the crunch of the toast with pops of rich creaminess.

5

Spoon the mashed avocado generously onto the garlic-rubbed toast, spreading it edge to edge. Drizzle lightly with extra virgin olive oil, and finish heavily with flaky sea salt and fresh black pepper.
